Mini Apple Hand Pies
September always makes me think of apples and school supplies. Does anyone else remember the way it felt to get fresh new school supplies each year? I can still smell those freshly sharpened #2 pencils. An abundance of apples seems to be appearing at every local grocery store. So many pretty fall colors and flavors! I wanted to buy one of each! Come mid-September, I am ready for that fall cozy feeling! I start putting up my fall (okay, maybe Halloween) décor and start dreaming of the days when I wake up to a brisk 60 degree morning with a cup of hot coffee in my hand with a delicious pastry! Today we are going to make apple hand pies to pair with your morning coffee and get you all in your fall feels. So light those fall candles I know you’ve already purchased, make yourself a hot cup of coffee, and put on your baking apron!
This very easy to make pastry will bring out the baker in anyone! We are going to use store bought pie crust, apples, and ingredients you are sure to already have in your pantry. There is nothing fancy about it, but this fool proof recipe will have your friends and family thinking you spent all day baking! This was my first time at trying my hand at apple hand pies. I always make pumpkin hand pies for Halloween (so be on the lookout in October for that recipe) and I wanted to try it with apples! They turned out amazing! It was so hard not to eat all of them at once! I
Ingredients:
-2 sheets of store bought pie crust. (1 box typically comes with 2)
-1 cup of chopped apples (you pick your favorite apples to use!)
-2 tbsp of granulated sugar
-1 tbsp of all-purpose flour
-1/4 tsp of vanilla extract
-a pinch of nutmeg
-1 egg
-1 tbsp of milk
-1/2 tbsp of butter cut into tiny cubes
-sugar to sprinkle on top
Let’s get to baking!
Step 1:
First you will want to preheat your over to 400 degrees and line a large baking sheet with parchment paper.
Step 2:
Now we are going to roll out your store bought pie crust onto a lightly floured surface. Cut the pie crusts with a 3 inch round cookie cutter or the end of cup to get roughly 16 circles. Place half of the circles onto your lined baking sheet. Set aside.
Step 3:
In a medium sized bowl, mix together your chopped apples, flour, sugar, vanilla, nutmeg and cinnamon. You can always adjust the spices to your liking. I tend to go a little heavy on the cinnamon. Make sure to combine it all together really good. You want your apples to look a bit moist.
Step 4:
Spoon about 1/2th tbsp of the apple mixture on the bottom half off the pie crusts. Make sure you leave enough room around the edges and don’t pile the mixture too high. Then place the dabs of butter on top of the mixture. Now place the top halves of the pie crust on top of the mixture. Using the ends of a fork, press down the sides of the mini pies to seal them. Then take a small paring knife to score the tops of the pies. I scored mine with an “X” shape.
Step 5:
Whisk together the milk and the egg until well combined. Brush the tops of the pies with the egg wash and sprinkle the tops with sugar.
Step 6:
Place the mini pies in the oven for about 25 minutes or until the tops of the pies are a nice golden brown. Set aside to cool before serving.
Now your pies are ready to devour! So grab a good book, your cup of coffee, and snuggle up with a warm blanket and let’s start dreaming of the fall weather to come! I am definitely going to welcome it with open arms this year!
